Rosa Mercedes Elvir Ardón

Honduras

My name is Rosa Elvir, I am a nutritionist, nurse and yoga teacher by profession. I worked in the most important public hospital in the country and while working as a nurse I continued studying my BS in Nutrition, a decision I made when I saw so many people suffering in the hospital with chronic diseases. Since 2009, I entered the world of volunteering and since then I have not stopped. I started as a lifeguard in the Honduran Red Cross and volunteered in different medical brigades throughout the country with the Honduran Armed Forces. I realized the need to inculcate prevention with good nutrition and I was interested in sharing my knowledge throughout Honduras and reaching the most hidden villages with vulnerable families. I was the creator of the nutrition students volunteer program at the National Autonomous University of Honduras (UNAH). I am currently the president of Capturando Vidas, an organization that works for the nutritional and social well-being of children in the dry corridor of Honduras in a project to reduce cocoa waste, generation of community jobs and diversity in food consumption. I work with the Honduran Secretary of Security as a Yoga instructor in the Peace and Social coexistence program providing free yoga classes to the Honduran population. This year I started a healthy snack project for people with chronic diabetes, cancer, and hypertension and I currently work in the area of Clinical Nutrition. I have been recognized by the Honduran Armed Forces for supporting their medical brigades for two consecutive years, and I am currently providing them with Nutritional Education. I was also recognized by the Food Security Innovation Forum as an innovative woman in Food and Nutrition Security in Honduras.
